This is a staggeringly hot chilli jam - we're not joking here - which is for the dedicated heat-lover. An ingenious combination of three chillis, inspired by Yorkshire's Three Peaks, you're first accosted by a sharp climb of Birds Eye chillis, followed by a steady climb of Habaneros, topped off by the long steady rise of the Bhut Jolokia chilli. On the hot-o-meter this rocks in at an incredible 9.9 out of 10, and is certainly not for the faint-hearted! Chilli jams are a surprisingly versatile store-cupboard staple. By all means use them as simple dips, or in sandwiches, or to liven up a cold meat platter, but using them as ingredients opens up a whole range of possibilities - marinade chicken or fish, or add a good dollop to a stir-fry to add heat and flavour in an instant. You can even slice a pocket in a chicken breast and fill it with mozzarella slices and chilli jam to create Chicken Leeds!
