The second "Ultra Jam" in The Chilli Jam Man's signature series, this is a super-hot ginger chilli jam with an amazing depth of flavour. It starts with a ginger chilli jam made even more potently than the usual version, which is poured over Bhut Jolokia chilli flakes and Sichaun peppers, to give it a tingly sensation. The hot-o-meter doesn't go high enough for this one! Chilli jams are a surprisingly versatile store-cupboard staple. By all means use them as simple dips, or in sandwiches, or to liven up a cold meat platter, but using them as ingredients opens up a whole range of possibilities - marinade chicken or fish, or add a good dollop to a stir-fry to add heat and flavour in an instant. You can even slice a pocket in a chicken breast and fill it with mozzarella slices and chilli jam to create Chicken Leeds!
